Me Want Cookie

The weather was drab and chilly so I stayed indoor and hung a few shelves. My drill is big and heavy and I'm short and not so strong so the shelves were not, shall we say, perfectly alligned. But luckily not so crooked that my mixer and blender and lamp slid off. Then I vacumed and did the dishes and made chocolate chip cookies which resulted in lots of new dirty dishes. They are still taking up the zink. But my cookies are yummy - as usual. I have a recipes which results in chewy, moist cookies with crispy edges every time. I think the secret is beating the butter until light and almost fluffy. Once I forgot this step and the cookies weren't nearly as good.

My recipe for Chocolate Chip Cookies:
  • 1 cup/225 g unsalted butter, room temperature (or salted but then use less salt further down)
  • 3/4 cup/150 g sugar
  • 3/4 cup/160 brown sugar (I use dark, but light works fine)
  • 2 large eggs
  • 1 1/2 tsp vanilla ekstract (sometimes I use vanilla sugar, but then 2-3 tsp)
  • 2 1/4 cups / 315 g flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups /250 g chocolate chips
  1. Mix butter till light and fluffy. Add all the sugar and mix until light for around 2 minutes. Add one egg at the time and mix. Add vanilla and mix till well blended.
  2. In different bowl mix flour, baking soda and salt. Incorporate in egg mixture. Blend in chocolate chips.
  3. Heap big Tsps of cookie dough on a baking tray lined with parchement paper. Flatten them a bit and put them in an oven preheated to 190C and bake for 11-12 minutes depending on your oven or until edges have browned. Leave to cool.
This dough freeze well. This is handy if you're are single like me and even with much effort just can't consume two dozen cookies. Either form into balls and freeze individual then place in bag or tupperware or do like me and roll into sausage in clingfilm and slice when needed. Just add a few minutes to the baking time.

Then there is nothing left to do but sit back and
enjoy a few cookies with a glass of milk. Om nom nom nom...

Summer is gone...

....and autumn has arrived here in Denmark. Though summer has its advantages, like strawberries and sunshine, autumn with all its colors is my favorite season.
With autumn comes nippy weather, hearty soups, hot chocolate and scrumptious cakes.
I don't have a fireplace in my little apartment but I do have my trusty, woolly blanket that I like to crawl under with a good book and a big piece of cake. Well, I like doing that year round...
